Whipped Feta & Microgreen Crostini

These Whipped Feta Crostini’s infused with Intensely Arugula Micros add a nutty and peppery kick to this app that's sure to impress your guests!

Ingredients

2 PacksIntensely Arugula Micros
2 CupsFeta Cheese
2 TbspOlive Oil
1Lemon, juice and zest
1 PinchSalt
1/3 CupRoasted Red Pepper, diced
1/3 CupWalnuts or Pecans, chopped

Instructions

MAKES 15 SERVINGS | 20 MINUTES

Preheat oven to 350 degrees F. Slice baguette and brush with olive oil. Place on a baking sheet and bake at 350 degrees F for 10-12 minutes or until golden.

In a food processor, add feta, olive oil, lemon juice, zest and salt. Blend until combined, adding some of the juice from the feta if too crumbly
Add a pack of Intensely Arugula Microgreens to the processor and continue blending until smooth/

Top baked baguette slices with feta spread, roasted red pepper and chopped walnuts.

Top with any dressing of choice: balsamic, honey, more olive oil.
