2 Slices | Sourdough Bread |
Salt, to taste | |
Pepper, taste | |
1/4 Cup | Hummus, to taste |
1 Handful | Intensely Arugula Micros |
Preheat oven to 375°F.
On a parchment lined baking sheet, lay out zucchini, onion and peppers, coat generously with Olive Oil, season with salt and pepper and roast for 15-20 minutes until softened and golden.
Allow to cool slightly. Meanwhile, slather each slice of bread with hummus and pile high with Intensely Arugula Micros.
Season and layer with veggies and tomatoes.
