Roasted Veggie Sandwich

This sandwich combines roasted, juicy veggies, crusty sourdough bread, a good helping of hummus and handfuls of Intensely Arugula Micros, the perfect, nutrient dense sandwich.

Ingredients

1/2Green Zucchini, thinly sliced
3 SlicesRed Onion
1/2Yellow Pepper, thinly sliced
1/2Red Pepper, thinly sliced
Olive Oil, as needed
3 SlicesTomato
2 SlicesSourdough Bread
Salt, to taste
Pepper, taste
1/4 CupHummus, to taste
1 HandfulIntensely Arugula Micros

Instructions

MAKES 1 SERVING | 30 MINUTES

Preheat oven to 375°F.

On a parchment lined baking sheet, lay out zucchini, onion and peppers, coat generously with Olive Oil, season with salt and pepper and roast for 15-20 minutes until softened and golden.

Allow to cool slightly. Meanwhile, slather each slice of bread with hummus and pile high with Intensely Arugula Micros.

Season and layer with veggies and tomatoes.
