4 Cups | Beef Broth |
1 Tbsp | Italian Seasoning |
1 Tsp | Oregano |
1 Tsp | Salt |
Pepper, to taste | |
1/2 Pack | Oh So Sweet Spinach |
1 Cup | Shredded Cheese, of choice |
1/2 Cup | Parmesan |
5 Strips | Lasagna Noodles (not oven ready) |
1 Cup | Ricotta Cheese |
In a large sauce pot or Dutch oven, heat to medium heat. Add olive oil and heat until fragrant. Add the diced white onion and garlic, saute for 3-4
minutes. Add ground beef and mix together. Cook until browned.
Pour in seasonings and tomato paste. Mix well. Stir in the beef broth, diced tomato. Bring to a boil and then reduce to simmer for 10 minutes. Add lasagna noodles, broken into pieces. Add in spinach, cheese of choice and parmesan. Cook until noodles are soft – add more broth if needed.
Serve with a dollop of ricotta and pepper to top.
