Fall Harvest Salad

Served on a bed of our Sweet & Spicy Mix, this fall harvest salad will bring all the flavour to your Thanksgiving table!

Ingredients

DRESSING

2 TspDijon Mustard
1/2 CupOlive Oil
1/3 CupPomegranate Juice
Salt, to taste
Pepper, to taste
SALAD
QuantityIngredient
1Butternut Squash, peeled & cubed
1 TbspOlive Oil
Salt, to taste
Pepper, to taste
3 PackSweet & Spicy Mix
1 CupFeta Cheese
1 CupPomegranate Seeds
1/2 CupPumpkin Seeds
1 CupWalnuts

Instructions

MAKES 4-6 SERVINGS | 60 MINUTES

Preheat oven to 425° F.

Toss butternut squash in oil, salt pepper and oregano and bake until soft.

Mix together the dressing and set aside.
To a bowl add GoodLeaf Sweet & Spicy Mix, cooked butternut squash, and top with remaining ingredients.

Toss with the dressing before serving and enjoy!
