Carrot and Ginger Salad

This asian-style salad is bright, punchy, colourful and packed full of nutrients. Pairs perfectly with tofu, chicken, pork or shrimp.

Ingredients

3Radishes, thinly sliced
Carrot Ginger Dressing
CARROT GINGER DRESSING
QuantityIngredient
1Carrot, peeled and chopped
2"Fresh Ginger, peeled
1 TbspSoy Sauce
1 TbspSugar
1 TspRice Wine Vinegar
1/4White Onion, chopped
1/4 CupCanola Oil
Salt, to taste

Instructions

15 MINUTES

Dressing:

Place dressing ingredients, excluding oil, into the bowl of a food processor. Pulse until chunky but combined.

Place on low speed and slowly drizzle in oil, until fully incorporated.

Assembly:

Layer GoodLeaf Asian Micro Blend and radishes in a large bowl, top with Carrot Ginger Dressing, and serve immediately.
