1/2 Cup | Feta Cheese |
1 | Lemon, juiced |
1/2 Pack | Zesty Micro Radish |
1/2 Cup | Pasta Water, or as needed |
1 Tbsp | Italian Seasoning |
Pasta of Choice, as desired |
Boil beets until soft. Begin to boil pasta.
To a blender add cooked beets, feta, lemon juice, Micro Radish, & pasta water. Blend until smooth.
Plate pasta, pour over sauce and mix well. Top with pumpkin seeds & more Micro Radish.
