2 Packs | Intensely Arugula Micros |
2 Cups | Feta Cheese |
2 Tbsp | Olive Oil |
1 | Lemon, juice and zest |
1 Pinch | Salt |
1/3 Cup | Roasted Red Pepper, diced |
1/3 Cup | Walnuts or Pecans, chopped |
Preheat oven to 350 degrees F. Slice baguette and brush with olive oil. Place on a baking sheet and bake at 350 degrees F for 10-12 minutes or until golden.
In a food processor, add feta, olive oil, lemon juice, zest and salt. Blend until combined, adding some of the juice from the feta if too crumbly
Add a pack of Intensely Arugula Microgreens to the processor and continue blending until smooth/
Top baked baguette slices with feta spread, roasted red pepper and chopped walnuts.
Top with any dressing of choice: balsamic, honey, more olive oil.
