Lasagna Soup

Made with our locally grown Oh So Sweet Spinach, every bowl of this comforting soup is just as nourishing as it is delicious.

Ingredients

1-2 TbspOlive Oil
1 lbGround Beef
1 LargeOnion, diced
4 ClovesGarlic, minced
1 - 28 oz.Can Diced Tomatoes
3 TbspTomato Paste
4 CupsBeef Broth
1 TbspItalian Seasoning
1 TspOregano
1 TspSalt
Pepper, to taste
1/2 PackOh So Sweet Spinach
1 CupShredded Cheese, of choice
1/2 CupParmesan
5 StripsLasagna Noodles (not oven ready)
1 CupRicotta Cheese

Instructions

MAKES 2-4 SERVINGS | 60 MINUTES

In a large sauce pot or Dutch oven, heat to medium heat. Add olive oil and heat until fragrant. Add the diced white onion and garlic, saute for 3-4
minutes. Add ground beef and mix together. Cook until browned.

Pour in seasonings and tomato paste. Mix well. Stir in the beef broth, diced tomato. Bring to a boil and then reduce to simmer for 10 minutes. Add lasagna noodles, broken into pieces. Add in spinach, cheese of choice and parmesan. Cook until noodles are soft – add more broth if needed.

Serve with a dollop of ricotta and pepper to top.
